Because they are very expensive I assume.
Considering the Metrodome is closing, and they are only two turf stadiums left. Why dosen't the MLBPA demand that these stadiums that still have artificial turf install natural grass considering there is a new product called Lumigreen, which has been tested at Penn State, which is a top grass school and is being used at Lincoln Financial Field in Philly. According to the site, it can grow grass indoors and I am sure they could get grass installed or removed in 12 hours if need be for a concert or in Toronto's case if the Argos and/or Bills still wanted Artificial Turf, a football game.

How do the players feel about the turf at the Trop and Skydome? It looks horrible at the Skydome, but underfoot it's probably about the same

They're supposed to be getting a new system in Toronto for next year. Hopefully one that doesn't look like a chessboard.
As for how it feels, you hear some players complain about it, but I think they're just using it as an excuse for something else. A good chunk of NFL stadiums have it and you never really hear many complaints about it from football players (though there was some complaints from Bills players about the Rogers Centre set-up last season).
It's funny to me, though, as I was just watching a old VHS I have about the 1991 Blue Jays season. The segment on Roberto Alomar talks about how he made the transition from grass to astroturf and he seemed to indicate that he almost liked the fake stuff more than real grass.
Maybe players today are just spoiled because they don't have to play on the super-hard surfaces they used to have in most places.
Home field advantage...
The Blue Jays would be smart to visit Northern Michigan University to check the turf they have there which is a AstroTurf product called PureGrass. It rolls into a pit like the Astrodome turf. It looks just like grass and has no infill, which is a good idea, considering the recent health scares.

RIP Tom Tresh. Detroiter. Chippewa. Yankee. Good man.
RIP George Kell. Batting Champ. Champ Broadcaster. HOFer. Good man.
RIP Mark Fidrych. The first player I actively followed.
Pigskin Fever, though, lives. http://www.pigskin-fever.com/ Come help make it as good as its sister site.
That was the grass tray system that would later be used at Giants Stadium and Reliant Stadium in Houston. The product I mentioned was just installed at Northern Michigan in their dome and is a modern verison of the magic carpet used at the Astrodome and Edward Jones Dome in St. Louis. Pure Grass is a turf made by the company who currently makes AstroTurf.

I havent heard any of the Rays players complain about the FieldTurf at the Trop. I can't imagine what that place would be like with natural grass though.
